Parsnips are a root crop with a stronger flavor than a carrot. Good for cooking in a stew or cooked by itself. They are  high in vitamins and minerals, especially potassium. It also contains antioxidants and both soluble and insoluble dietary fiber.

Mix Parsnips with cubed potatoes, carrots, rutabaga, butternut squash, olive oil and salt and pepper…then roast and enjoy a wonderful cold weather side dish!
