Spinach contains high levels of the phyto chemicals chlorophyll and carotenoids which have anti-inflammatory and anti-cancerous properties and contribute to healthy eye-sight by preventing macular degeneration and cataracts.
It should be stored loosely packed in a sealed plastic bag in the fridge. Do not wash spinach before storing, as the moisture will cause it to spoil, wash before consumption. Raw spinach has a milder taste and is great either by itself or added to loose leaf salad. If cooking, opt for steaming or sautéeing rather than boiling to preserve the nutrients.
