Beef Porterhouse Steak is perfect for the grill. This steak contains both the top loin and the tenderloin and is one of the most prized steaks available. Steak from grass fed beef tend to be leaner so they need to cooked accordingly differently than grain fed animals.
For grass fed steaks always pre-heat the pan or grill before cooking. When grilling, sear the meat quickly over a high heat on each side to seal in its natural juices and then reduce the heat to a medium or low to finish the cooking process, baste to add moisture throughout the grilling process.
The animals are 100% Grass Fed throughout the whole summer and they are rotated to fresh pasture every week. Water is always available only a walk away and sometimes the sand hill cranes come to visit the cattle. The pastures are certified organic as well as the hay they are fed. In the winter they are brought up to a small pasture area where we can easily watch and tend to them daily and it provides some protection from the wind. The animals are processed at about 18 months old before full maturity so the meat from them is tender as compared to animals that are older.
